I don't know about "best ever," but I've always been partial to the Samurai Showdown games (Last Blade was also pretty cool).
What about Marvel vs. Capcom and Marvel vs. Capcom II? I think those are the best.
Maybe they could ift with Street Fighter, or X-Men, but I'm not sure on that.

I'm going to go and say Street Fighter for now, though as AdamXS has stated, there have been a lot of weak SF games churned out over the years. Most of those are due to Capcom's insane habit of milking all their hit franchises to hell and back again. Even so, there are tons of excellent SF titles, and it WAS the series that started the fighting genre in the first place, so you gotta give it props.
Samurai Shodown gets a close second though, along with the KOF series, which I simply haven't played enough of to judge yet. Guilty Gear may be up there also... I really like the look of that series, and I'm gonna pick up the PSX version soon...
Though this is a tough one, I'm gonna go Street Fighter. Street Fighter 3:Third Strike is probably my favorite fighting game of all time and well, I think the only games in the series that I don't really like would be the EX series and the first one.
KOF, Fatal Fury, and Guilty Gear all come really close, though...

Street Fighter III: New Generation had some interesting concepts, but was clearly rushed. For example, the super art background change doesn't make me think powerful attack at all.
But the rest were sub-par and to good at times. I just bought SF 3: Third Strike and I love the graphics and gameplay totally is evolved from SF 2.
I actually own a copy of SF I and SF II for the PC and all I can say is SF I was really offensive game all the through. SF II became slight defensive... I have to say Super SF 2 Turbo was one of the finest games out there... I am with some of the those SF Fanboys who bought EX 3 without actually having a PS2...

Man... tough call. First thing's first though- nice job on the list, Zappages, you got all the biggies. It's very comprehensive.
Anyhow, SF and KOF kind of bore me, so neither of those has a chance. Art of Fighting and Fatal Fury are a little dull also. However, I LOVE both Samurai Showdown and Last Blade, and I'm quite partial to the Marvel games and the Guilty Gear series. I'd have to say that, when all is said and done, I like the Marvel ones the most, but that's pretty much because of the license. Samurai Showdown gets second place.

Of late it's the one I've simply had the most fun with.... I don't play 2D fighters that much so I wouldn't consider myself an authority figure.

King of the fighters gets my vote. The street fighter series is good but just does not put out enough new games. I would have put down samuri showdown but I have only been able to play ss2.
I'm gonna go with KOF. It has much more depth than almost every other 2D fighter, especialy Street Fighter(though I still think SF is great). It's got add-on moves, striker attacks(some of them), and 3 on 3 matches.
Very close runner-ups are Mark of the Wolves for it's superb animation, responsive controls, and classic gameplay;and Guilty Gear for the best 2D fighting animation ever, the most unique characters ever, and those lovely instant death moves.

Marvel vs. Capcom 2. I don't know which category this goes in.
Guily Gear is awesome eye candy and controlls well, but some characteras are far too cheap for lasting enjoyment (the little girl with the anchor is harder than the final boss)

Why do people do things, why?? Sometimes I just wonder why but I can't figure it out. But I will. And when I do that will be the day.
I'll have to go with Street Fighter. However Samurai Showdown, and Last Blade trail very closely behind. MVC2 was fun, but truth be told it was just SF with Capcom and Marvel characters.
