"My glasses, I lost my glasses."- Velma. She seems to lose them in every episode.
"Let's see who the (monster name) really is."- Freddy, also in nearly every episode.

Hard to decide between "zoinks!" and "jinkies!" Both are just so delightfully fun exclamations.

I like a lot of Velma's one-shots; they are pretty memorable and catchy:

"It's up to all of us..now MARCH!" (Clue For Scooby doo)
"I was right, A tape recorder!" (Mine Your Own Business)
"Pl-astic, and definitely a clue!" (Tiki Scare is No Fair)
"...or in this case, the eeri-OR decORatOR!" (Scooby Meets the Addams Family)

When they changed the voice, they completely changed the character. The one from the Scooby Doo Show era that parallels the first example above was
"Enh, enh; MOVE!" (Ghost the Sacked the Quarterback)
    Aww, isn't that cute?
    But it's WRONG!!!

Thumbs up Scooby Doo Sight Gag #1: "I Can't Open The Door!"

Something about one of Scooby's humans trying to pull a door open with their feet on the door and they end up saying "I can't open the door!"
Well of course when one of them has their feet on the door then they're not going to be able to open the bloody door. That of course is the best Scooby Doo style sight gag ever.
