Can somebody explain why the show was cancelled in the first place? It seems to be doing very well for itself.

The reason is because kids end up founding the show scary, and they spent a lot of the budget on stuff like those CG scenes with spaceships and what not. When all the money was spent, and the ratings weren't looking so hot, they decided not to put more into the show, thus ending it with one season and a half.
These days they likely don't see a reason to make more episodes since people will still buy all the merchandise whether the show's on the air or not.

I'm so confused - there seem to be a million different stories about why Zim ended. I was always under the assumption that Jhonen Vasquez himself pulled the plug on the show because he hated working on stories with a bunch of other people. (He certainly seems like the type who'd keep to himself - heck, he put plastic over the windows of his office at Nickelodeon so the sunlight couldn't get in.)

No, I remember Vasquez getting along quite well, at least with the crew he worked on. (To understand my argument, hear the commentaries on the Media Blasters-produced DVDs.) You do possess a point- in general hindsight, I am not particulary sure where these stories come from, since there does not appear to be a general assumption of Zim's cancellation. Actually, this entire thread is getting off-topic, so let's simply say that I am genuinely surprised by Invader Zim's popular culture status. If it weren't for Jhonen Vazquez's alienative attitude, it would have been revived and granted an almost infinite number of seasons, even at the point when it becomes shockingly mediocre and nobody cares about it anymore.
