"Buzz Lightyear" Question

I caught the tail end of this morning's episode of Buzz Lightyear of Star Command, where he was working on a farm with an Amish-type mother and her son (a parody of Witness), who rode half-bird, half-frog-like creatures, and they were all fighting some guy who talked like Ricardo Montalban.

Does anyone know the name of this episode, and what happened in Acts I and II of this story? I want to know its name, so I can catch it again in the reruns.

Seems whenever I watch the tail end of a certain episode of any show, I get hooked on it. (This happened to me with Rocket Power and Samurai You-Know-Who).
