Uncanny X-men is always good. You might also want to check out X-treme X-men, since it just started. The story may be a little confusing, but I like it so far.
Later.
I gave up on the ongoing X-Men books just before the latest revamp, so I can't help you there. But a far as the classics go, try to pick up anything by Chris Claremont and John Byrne. Their X-Men will never be equaled.
The Dark Phoenix Saga and Days of Future Past are highlights from the Claremont/Byrne era. There's also God Loves, Man Kills, and Claremont & Frank Miller's Wolverine.
All are available in TPB.

X-Men: The Dark Phoenix Saga
Uncanny X-Men #129-137
X-Men Days of Future Past
Uncanny X-Men #141 and #142
Wolverine #1-4 (mini-series)
I forgot to include:
Wolverine: Weapon X
Marvel Comics Presents: #72-84
Wolverine first appeared in Incredible Hulk #181. He then appeared in Giant Size X-Men #1, which led into Uncanny X-Men #94.
Xavier supposedly monitored Logan during his battle with the Hulk, and approached him soon afterwards to join the X-Men. It’s been a LONG time since I read those tales, but it was John Byrne’s plan to expand upon them in his short-lived X-Men: The Hidden Years book. Hidden Years picked up after Uncanny X-Men #66, when the book went into reprints until issue #94. Byrne planned to fill in this “lost time” with how Storm, Colossus, Nightcrawler, etc. joined the team.
As you may know, much of Wolverine's past is speculation, as several stories contradict others. But that just serves to add to his mystery.

Look for "The Essential X-men" Volumes 1-4. These black and white TPB start from Giant Size X-men #1 (the new team with Wolverine saves the original team). Then after that, it's Uncanny X-men issues 94-179, with a few annuals thrown in. The Dark Phoenix saga is in Volume 2. Each is 14.95, though, so it's probably better to just grab all four.
On a personal note, I loooooove these books. Because they are black and white, the art takes a backseat to the great stories.
Good hunting.
Later.
I'm surprised no one has mentioned Ultimate X-men. Its not in continuanity with the rest of the X stuff and its a good read. Where about 20 odd issues in now but TPB have been made. I've only read the TBP so far. I highly reccomend them. And I've never even really like X-men books. But Nick Fury is white in X-men. No matter what anyone tells you he's white.Believe me.
