Eustace...I'm not sure he actually held the bear, but in the Mother's Day episode he goes to visit his mother and you find out she abuses him like he abuses Courage. She pulls out a teddy bear intended for Eustace, but Courage ends up snuggling with it.

In the episode, 'Who What Where Ed' to be more precise.

He is seen gallivanting about with a gaint teddy bear, upon Sarah's request, in efforts to complete a long line of trades resulting in receiving a shiny egg from Rolf. ::pant pant::

Well, since it's now closed, I'll tell you the answere. The only one actually seen sleeping with a tedy was Buck inthe episode Flondering Fathers.

Jimmy has been sceene with a teddy bear in "A Glass of Warm Ed"....but I know that he wasn't in the choices ^^o
