Obviosuly my favourite is Star Wars, but here are all the series I like.
Star Wars - (tie) A New Hope, Empire Strikes Back
Die Hard - Die Hard
James Bond - The World is Not Enough (though I haven't seen any of the old ones)
Batman Movies - Mask of the Phamtasm (unedited ROTJ is close)
Believe it or not, it's been too long since I've seen Indiana Jones, and I can't remember any of the 3. I kinda remember Temple of Doom, but until someone told me, I didn't even know Connery was in Last Crusade!

I too love "Highlander" (if you haven;t seen the directors cut, you haven;t seen it.) But it think the rest of the movies are pretty crappy. So the "series" thing is dubious.
Police Story (Jackie Chan; includes "Police Story," "PS2," "Supercop," and "First Strike.") - Favorite is "Police Story."
James Bond - From Russia with Love
Indian Jones - Last Crusade

Star Wars and Indiana Jones are, of course, obigatory answers. I also liked the Addams Family movies, and the Brady Bunch movies. While those weren't essential, they were good fun. Other than that, there aren't many more I can think of off hand. Oh, of course, the Jersey movies from Kevin Smith! How could anybody miss those?

I actually like the sequels! Funny thing about that, actually. The first Highlander flick I ever saw was the second one, and I absolutely loved it. Then I heard all the "die hard" fans complaining about how it changes everything, so I went back and watched the first one, which I also loved. But I still love that second one - a great sci-fi flick in and of itself. The third one was ok, but this last one they did - the one that was the combo of the guy from the TV series and original - is an excellent flick - probably tied with the original for me. And the funny thing is, I never cared for the TV show!

Out of the Batman flicks, I like the first one.
Then there's Ghosbusters. Both of them rocked.
From Batman animated, MOTP sticks out the most.
From the 90's bond trilogy, Tmorrow Never Dies is the superior one.
And Star Wars, I kinda of like them all equally.
