Since the Screen Actors Guild recently rejected a final contract offer days after the former contract's deadline, how come the SAG hasn't officially started to go on strike as of yet if they vote to?

While I'm not an expert about SAG or what they're planning to do with their contracts, I'm not sure if they would want to have another strike so soon after the last one just ended. For any union force, a strike is used only as a last resource due to how it effects everyone striking or not. Those in the strike have a very small paycheck and those who are not a part of the strike, in this case like the camera crews and other parts of the crew not connected to the writing staff, would be out of a job. In other words, I think that SAG is trying to make a decision and see what they're options are before jumping into another strike.

2/3s of SAG members would have to vote to approve a strike, only after the board of directors propose it to them, if they feel that the studios aren't being reasonable with their offer.

2/3 or 75% of the members of SAG have to vote for a strike. Plus, a lot of SAG members are also members of AFTRA who ratified their contract this week. So those SAG/AFTRA members that voted for the new AFTRA contract, will vote against a strike.
Plus, there is a lot of pressure on SAG not to strike. Everyone saw just what the writers strike did to the California and New York economies. More so California. The industry can not have another strike. Hollywood is still recovering from the first one.

AFTRA has a new contract -- there's nothing to be worried about there.
SAG, so far, has opted to continue working without a new deal in place ... but the clock's ticking.
