I'd say my favorite cartoons made since 2000 would be The Emperor's New School and Adventure Time (if it counts). Zim, if it counts since I'm pretty sure it started in like '99 but am too lazy to check since I'm just about to hit the sack, would be another good one, and Fairly Oddparents, at least for awhile, is decent. I actually used to think Spongebob was pretty good, too, but I guess because of the extreme popularity-wave it has accumulated along with the fact a lot of the more recent episodes seem quite watered down, it's lost a good amount of weight with me.

Teen Titans was okay, sometimes laughably bad, sometimes amazingly great. Justice League--most notably, Unlimited--was absolutely breathtaking, as well. If you count them, most the Adult Swim short cartoons have been more or less entertaining, too, especially Harvey Birdman.
