in anime, it's hard to choose. Noir, LastExile, Angelic Layer, Naruto, FullMetal Alchemist, Paranoia Agent. They all are good, the animation, the music, all make great cominations.
I think for Anime though I'd choose Ghost in the Shell, 2nd gig

Ren & Stimpy: Even though it's just random clips from "Big House Blues", the beatnik/jazz style music and the spastic, rubbery animation really got me excited for the show. Quite possibly one of my favorite openings ever.
The Critic: Lots of good gags, and the changing movie that Jay proclaims "It stinks!" to are usually funny.
Simpsons: Self-explanatory.
American Dad: The newspaper headlines almost always crack me up, and the theme song Stan sings is very catchy, with its patriotic theme.
Harvey Birdman: Cool graphics. My favorite moment is when a woman slaps Birdman and he smiles, with the caption "OVERRULED!"
Batman the Animated Series: Moody, tense, original, all those other adjectives. Truly one of the greats that proved that Americans can do serious tones, not just comedic ones. Oustanding orchestral music, too.
Space Ghost: In particular, the 3D intro where the camera flies past all the planets and into the Ghost Planet Industries building to Space Ghost's desk.
Dilbert: From primordial ooze all the way to computer programmer, then witnessing the chaos that erupts in the office from a simple paper airplane, this one is fun to watch every time. Great storyboarding.

I remember the first time I saw the opening theme to A Pup Named Scooby Doo, I was like, this must be Scooby done in Bob Clampett style. Intro to Pole Position and Saturday Supercade are both equally fun and 1980's. :D
