Why did Ultra Humanite have his brain placed in the body of a Ape?

Because an ape is much stronger than a person. he wanted a body suited to the greatness of his mind. And this is a Giant Ape we are talking about here.

Recently they showed in a comic the giant white ape with the brain removed (not as gross as it sounds). Apparently he had quite a thing for swithing bodies often before he got his brian put in the ape.
