After being reacquainted with my collection, I think I have a few more obscure ones I could toss up.
Ice Hockey - My very first game ever, and still fun to this day. Wacky, unrealistic arcade-style hockey game.
Spy vs Spy - I loved the multiplayer VS in this game, and hadn't found a game like it since. Run around a house, searching for things to steal, while leaving a variety of traps for your enemey? Heh heh heh
North vs South - An original turn-based strategy game that had you compete against your opponent in a bunch of different confrontation possibilities, from controlling an entire platoon of cannons, cavalry, and soldiers to running on a moving train to stop the enemy from getting supplies.
Snake Rattle and Roll - Charlie mentioned it! Another great multiplayer game with a more polished but odd anti-centipede like feel.
RC Pro Am - First time racing with missiles, mines, and oil slicks. Man, even Rareware kicked butt back then.
Who Framed Roger Rabbit - Maybe just cause its my favorite movie ever, but the game did a great job incorporating elements in and making a unique random quest-type of game. And another Rare game! Hmmm.
Little Ninja Brothers - One of the first Action RPGs I'd ever known that took away turn-based battles (mostly) in favor of action combat and had a fun and wacky story to boot. And it was multiplayer! How this game could have missed the train of success of Zelda, Dragon Warrior and Final Fantasy is beyond me.
Bubble Bobble and Snow Bros - Slightly similar arcade-style platformers that were also great to play with friends.
Tetris - From the obscure to the purely obvious, but undeniable
Maybe I'm just getting nostalgaic, but games back then were so varied and wierd, and knew how to do some real special things with multiplayer, both deathmatch and coop - that I once again miss that generation.

I think with the NES, the most fun I had with the console came with the sports titles. Tecmo Super Bowl is just a great game that survives the test of time. Very arcade style and fun. Also, endless fun could be had with RBI Baseball. Tengen's addicting, and also simplistic baseball game leaves hours of fun. Ice Hockey also followed this simplistic, but fun format.
In terms of not sports games, I always had a good time playing the original Teenage Mutant Ninja Turtles game. The dam level where you have to disarm the bombs has become memorable. Mega Man 2 will forever remain as my favorite in the series. River City Ransom, Dodgeball, Contra, and Ikari Warriors II: Victory Road all served as great multiplayer games. Mario rule or not, Mike Tyson's Punch-Out is still fun to play.

Which all should probably count more anyways, since Bubble Bobble is an arcade game originally.Disagree. Most arcade ports done on the NES sucked because the NES just wasn't up to the task. The few that got it right (Bubble Bobble, Ghosts and Goblins, Contra, and a handful of others) deserve to be called classics.

Ice Climber, Balloon Fight, Metroid, Earthbound 0 (although not released in the US), Popeye (it was first-party), Pinball, Urban Champion, Kid Icarus, the list goes on.

And now for something completely different...
Sweet Home
Yeah, it's a game that never came to America. Yeah it's only the most awesome game ever. It's a precursor to the horror games of today. It takes place in a haunted house that belonged to a famous mural painter. Of course, it hides a dark secret....
This has a great story, and is pretty scary for an 8-bit game. Heck, it's probably the only scary 8-bit game. It's kind of a survival horror rpg. You fight monsters and can pick up new weapons, and your stats increase as you go along. You also have to do inventory management. Each character (there are five) comes with one item that the rest of the party needs. You can use a camera to uncover secrets written in murals, a lighter to burn away rope obstacles, and a medicine kit to heal people who are poisoned. Besides that, your characters only have two other inventory slots. You need to use those to pick up things like boards and logs to span gaps, among other things. Oh, and you have one weapon slot. So you have to juggle with that, as well as solve puzzles and try to get out of the house alive. Let's just say the story is probably why this game didn't come to America. But it's a favorite of mine.

That game is still good. Sadly, a lot of people I know have never heard of the game.
