I constructed a list of information (current as of 12-13-04) in the hopes that I will stop seeing made up comparisons between companies in the near future.
GC:
Total titles: 480
Mature titles: 28
Teen titles: 126
Role playing titles: 17
Titles published by Nintendo (all regions): 161
Titles developed by Nintendo: 33
Xbox:
Total titles: 773
Mature titles: 94
Teen titles: 217
Role playing titles: 18
Titles published by Microsoft (all regions): 195
Titles developed by Microsoft: 14
PS2:
Total titles: 1213
Mature titles: 128
Teen titles: 346
Role playing titles: 55
Titles published by Sony (all regions): 121
Titles developed by Sony: 13
The only statistic I can't seem to find is how many online games each system has. But if and when I do I'll add it.

Just curious, how did you compile this list? IGN.com or something?

Just curious, how did you compile this list? IGN.com or something?Gamerankins.com and each companies respective site. Gamerankings is a wonderful tool because they categorise each game based on genre, rating, publisher, developer and scores given by numerous, globe spanning, review sources. Basically, if you set it so you can see every T rated game of Xbox, it will give you a list, obviously the number of titles on the list is the number of T rated games on Xbox.
I also used Gamefaqs listings of developed titles and published titles for respective companies for different systems. Keep in mind that developed titles are region spanning, so when Nintendo publishes 1080 Avalanche in the US, Japan and Europe it counts as 3 games (on the list I've compiled, I mean).

Even when you combin the # of title for the GC/xbox, their still no clasoe as the 3 of titles on the ps2. No wonder the concole race is so onesided.

It's the classic catch-22 situation that Microsoft and Nintendo have to deal with: Consumers will be more inclined to buy the system with the most games, and video game companies will likely make more games for the system that most consumers buy. Consumers believed the Playstation 2 would be the most supported console this generation in 2000, and it became a self-fulfilling prophecy.

Of course, how many of those extra titles were quality games?
I'm sure the 4 or 5 versions of "Cabella's Big Game Hunter" were DEFINITELY worth the $50 price tag, right? Right?
Like the N64 vs. PSX days, just because they have more titles, doesn't mean they're necessarily better.
Quality vs. Quantity.

And of course, that's the sort of thing that no simple statistic can definitively prove or disprove. For more people than you'd probably be prepared to believe (they bug me all the time at my work, and most of them have regional accents inconsistent with the region in which we live), those four or five Cabelas games are the only ones that matter.
