What is the name of the "tap dancing/performance" theme that can be heard in so many WB cartoons? For example, it plays when Bugs is trying to entertain the doctors in "Hot Cross Bunny", and more recently over the performance scenes in "Blooper Bunny."

I'm not sure, but I think that it's a Carl Stalling original.

I am stumped, and this is coming from a music teacher!
I am thinking that the obvious examples must be from Stage Door Cartoon and Bugs Bunny Rides Again. Is that what you were talking about? I am not too familiar with Hot Cross Bunny to be honest with you.

Yeah, I'm pretty sure. I don't remeber "Stage Door" that well, but I think it was played during the "Dance!" sequence in "Rides Again"

I have always thought Stalling made that one up; it isn't from any stage musical, I am pretty sure of that, nor is it a ragtime piece I recognize.

I remember reading that Stalling called that one the "Buck-and-Wing" which he derived from Vaudeville acts of days gone by, which make it an unofficial piece of music seeing that he indeed did kind of "make it up".
