3:30 AM- Fullmetal Alchemist: Brotherhood (since they go back to 1 & 2 this week, it will be episode 3)
4 AM- Cowboy Bebop (episode 25)
4:30 AM- Cowboy Bebop (episode 26)
5 AM- Inuyasha (episode 7)
5:30 AM- Inuyasha (episode 8)

I'm wondering if them jumping to the end of Bebop again is any indication of another show moving into half of its slot the following week, possibly something like the return of Ghost in the Shell for half and Cowboy Bebop for half. Or maybe they would shock us all and throw in something like a Gundam series.

The online [adult swim] schedule doesn't go past December 2 yet, so we'll have to wait and see what types of goodies could be waiting for us in the future.

Could be nice, but no, they already confirmed on the tumblr somewhere that they're aiming to make the schedule stay like that until Samurai 7 ends.

Nah, they love Eureka 7, hence why they picked it up again for Toonami, despite it not doing well on Adult Swim previously. The problem is that it's underperforming this run too. Adult Swim's general audience just doesn't seem to care for it.
